Jamaican me hungry!

November 14, 2011greatshapeincbob marley, food, Great Shape Inc, Jamaica, recipes, www.gsjamaica.org

Give me Jamaican jerk chicken, any time, any place! Here are some island party favorites you can cook up right on the grill. Fast, easy and fun! What more could you ask for?? Have any fun recipes of your own? Please share!
It’s fun to open up the windows, let in some sunshine, and put on some Bob Marley while cooking “Jamaican stylee”.

Turkey Jerk Burger with grilled Pineapple
1 lb lean ground turkey

1 tablespoon jerk seasoning
4 pineapple rings
1 tablespoon teriyaki sauce
4 slices reduced-fat cheddar cheese

4 slices bacon, cooked and cut in half
4 whole wheat rolls
cooking spray
4 leaves romaine lettuce
2 tablespoons light ranch dressing
Island Spiced Potatoes: Cut potatoes into cubes and put in a foil packet with butter. Season with tarragon flakes and curry powder…oh they’re good!
Jamaican Jerk Chicken: Cut the chicken into strips and season with jerk spice. Allow it to marinade for an hour or so. Cook on skewers for easy party food.
Bacon Wrapped Grilled Pineapple: This treat goes with any island theme party. These can also be made on skewers.
Coconut Cookies, Cake, or Cupcakes, Coconut shrimp and many more!
